La Semana Santa Food¡Qué rica!Like any other major holiday in Guatemala, La Semana Santa food has its own menu, loaded with delicious foods of all descriptions.
Here are a couple of easy recipes to help you enjoy the Semana Santa season. Elotes Locos
These are a very popular snack sold along the streets and in front of the churches during Semana Santa. It's a simple dish to prepare and is a favorite, particularly among children. 4 cobs of corn Mayonnaise Mustard Ketchup Salt Directions: Boil the corn in salted water until tender. Remove and let air dry for a couple of minutes. Cover the entire corn cob with all three condiments and sprinkle with salt to taste. Eat hot. NuegadosThese tasty sweets make a great dessert and they're relatively simple to cook up yourself. Covered with a thin icing, they are usually sold in small stacks of 3-5 balls.
3.5 cups flour 4 eggs 8 egg yolks 1/2 teaspoon salt Juice of 1 orange 3 cups oil 3.5 cups sugar Directions: Put the flour in a bowl and make a well in the middle. Add the eggs and egg yolks, as well as the salt and the orange juice into the well. Stir until fairly well mixed, using your hands if necessary. Turn the dough out onto a floured board and knead until smooth and lump-free. Pinch off pieces about 1/2 inch in diameter. Heat the oil until it spits when a drop of water is added. Drop in the pieces of dough and fry until they puff up and form little balls. Remove when golden brown and drain on paper towels. Icing (for nuegados) 3.5 cups sugar 1 cup water Bring the mixture to a boil and simmer until a drop of the mixture into cold water forms a soft ball. Remove from the heat and beat with an electric mixer until it turns whitish. Coat the nuegados in the mixture and stack them in groups of three on a sheet of parchment paper to dry.
